Last night’s semifinal of The Great British Bake Off awarded Hermine the title of star baker for the second week in a row during an exciting, three-part soft cake challenge. Her winning creation was the incredible jelly art cake she made featuring an intricate red poppy-in-gelatin design, layered on top of chocolate and raspberry mousse. The cake was so mesmerising that judges Paul Hollywood and Prue Leith had to ask it be taken away because it was just too delicious – which inspired us find some jelly cakes and recipes that are equally impressive.

3-D art jelly cakes are credited to have originated in Mexico, where intricate creations with flowers and fish ponds continue to be a staple dessert at parties. The cake trend has more recently been picked up on Instagram and Tik Tok, where bakers like Nünchi, Gelatin Art Market, and user Petrichoro‘s dreamy desserts have gone viral.

If you are as captivated with these beautiful desserts as we are, or fancy making one for your next at-home activity, keep reading ahead.
